The one and only pancake recipe I will use
I found it on Cooks.com. It tastes like Mrs. Butterworth but better because I know I’m using fresh ingredients and also I know what is going in my batter. It’s amazing and doesn’t take long at all. Just make sure you sour the milk first. (I use 1% milk w/ vinegar)
1 to 1 1/4 c. flour
2 tbsp. sugar
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
1 c. sour milk (1 c. sweet milk plus 1 tbsp. vinegar)
1 tbsp. vegetable oil
Preheat griddle to pancake setting (350 to 375 degrees). Sift together dry ingredients, using 1 cup flour. Combine egg, milk and oil and add to dry ingredients. Gradually add the 1/8 to 1/4 cup additional flour until batter is of medium consistency. Mix until just combined (over-beating toughens). Makes about 12 pancakes.
Home Made Fries
Last night we decided to just have some cheeseburgers. My kids have been begging for french fries but I kept forgetting to pick some up at the store. So since I had a bag of potatoes and have always wanted to try to make some home made fries this is what we came up with.
Depending on the size of your family and how much you want to eat I would start with two potatoes. I read online to have two potatoes per person and that is way to much.
All you need is a pan, potatoes, and oil. Seasoning if desired.
- Peal potatoes
- cut 1/4” thick and how ever long you prefer
- place sliced potatoes on greased pan
- either spray with cooking spray butter or pam. I drizzled olive oil on top
- sprinkle with seasoning (optional)
- place in oven on normal broil (online it said ten minutes. I had mine on the top rack which made ten minutes burn some fries so I’d just watch them.)
- Flip over and place back in oven (online said for another 6 minutes but mine were good at 3 or less minutes)
- Enjoy!!!

Chewy Cookie Butter Granola Bars – adapted from this recipe
Vegetable cooking spray
1 egg white
1/2 cup “Cookie Butter” (Speculoos spread)
1/3 cup brown sugar
1/4 cup honey
1/2 cup (1-stick) unsalted butter, melted
2 cups old-fashioned oats
1/2 cup slivered almonds, toasted
1/3 cup chocolate chips
Directions
Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F. Arrange almonds in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly toasted, about 8 to 10 minutes. In the meantime, spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray. In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips. Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.

1 1/2 cups all-purpose flour2 tablespoons sugar, plus 1 tablespoon
1 lemon, zested
1/4 teaspoon fine sea salt10 tablespoons (1 1/4 sticks) unsalted butter, chilled and cut into 1/2-inch pieces
3 tablespoons ice water
1/3 cup cream cheese, at room temperature
1 teaspoon vanilla extract2 tablespoons honey
6 large or 12 small fresh figs, sliced, stems removed
1/4 cup apricot jam
Combine the flour, 2 tablespoons sugar, lemon zest, and salt in the bowl of a food processor. Pulse until blended. Add the butter and pulse until the mixture resembles coarse meal. With the machine running, gradually add the water until moist clumps form. Turn the mixture out onto a work surface and form into a ball. Flatten the dough into a disk and wrap in plastic wrap. Chill the dough for 1 hour. In a clean food processor bowl, combine remaining sugar, cream cheese, vanilla extract, and honey. (I used the small bowl attachment for this) Blend until smooth. Position an oven rack in the center of the oven. Preheat the oven to 400 degrees F. On a large sheet of parchment paper, roll out the dough into an 11-inch circle. Transfer the dough to a large, heavy baking sheet. Spread the cream cheese mixture over the dough, leaving a 2-inch border. Arrange the figs on top of the almond filling. Spoon the jam over the figs. Fold the dough border over the filling to form an 8-inch round, pleating the crust loosely and pinching to seal any cracks in the dough. Bake the tart until the crust is golden, about 40 minutes. Place the baking sheet on a rack to cool for 10 minutes, then slide a metal spatula under the crust to free the tart from the parchment. Transfer the tart to a platter and serve.
spinach smoothie
It sounds kinda gross, however I’m huge HUGE into spinach. I think I may have to try it. I wish I didn’t let my kids eat the last two bananas this morning. :)
